Linux docs for setting up bootable partitions and/or boot disks seem to have the best overviews of the processes these days.

Try the redhat or freebsd sites. There used to be a lot of dos info about this, but now most of the info is in unix install instructions. The priciples are the same, and many installation/general info stuff on the unix sites cover dos as well.

Information about boot blocks is the same. What is it that you're trying to do?
