I was wondering how decentralised P2P networks work if there is no server.

I hope I am not breaking any forum rules.

P2P works like "and they told 2 friends". Clients tell each other about other clients.

Basically every client joins a cluster, a group of clients that all know each others IP addresses and communicate with each other. It all works out like a chain, as every other PC in your cluster will be connected to a differant cluster.
When you send a search (legal of course) your client passes it on to every other PC in your cluster, once an other PC receives the search it will check to see if it has what you want, if it has it will return you some results and then it will forward the search onto another PC in the remote computers cluster. Thats why it can take a while to search completely.
(btw thats just how to Gnutella protocol works)
