Can I have multiple forums on the same server space from one db?

Yes, you can just change the table prefix in the configuration steps...

The other issue with using the same server space is that you'd need to turn off application variables for one of the forums (There's threads on how to do that).
 
The workaround to enable application variables for all forum instances forums is to have any additional forums in their own sub domains - but you can still use the same db with the change michael noted.

EDIT to my previous post.
 
Where I talked about resolving the application variable problem by putting additional forums in sub domains, I should have said in sub domains or in separate domains.

In reality all instances would be from unique sites on the same server so would it be safe to assume that I'd be OK with the application variable issue?

Yup.
Each domain/sub domain is a separate application so it will have it's own application variables.
