if a new post contains an uploaded image, the e-mail notification contains the code:
img src="uploads/USERNAME/imagename.gif" border="0"
which of course does not display the image in an e-mail reader

is it possible to either strip images completely off the notifications (replacing them with some placeholder message) or use a complete path there?

It could be done, but could become quite complex.

Having the post sent with the email notification is meant to be more as a ruff guide to the contents of the post (as other things like links etc. can also be incorrect) rather than an 100% accurate reproduction of a post.
