Fresh install of 8.03, getting multiple variable undefines in default.asp. If I dim one the next one bombs out. What am I missing.

You should not get any issues of undefined variables unless you have modified the files, or you have corrupted files.
Try re-uploading the original files again.

Thanks, there are read/write issues now. I configured my host to have a write directory called 'fpdb' and have successfully opened the sample file, wwforum.mdb. Now, I am trying to do a version 7-8 update and am getting an error that the database is read only again. I know I am almost there, if I can get my old forum back up again.

Make sure that if you right click and choose properties on the wwForum.mdb file before uploading that the 'read-only' attribute is not checked.
If you still get these permissions errors contact your web host and ask them to setup read, write, and modify, permissions on the database folder as on a Windows web server the permissions need to be set on the server and can't be done through FTP.

If you are using FrontPage (fpdb), make sure you respond "NO" when asked if you want to set up the access db. Use the wwf configuration info to map to the db instead of FrontPage's "helpful" wizard. Also, delete the db garbage FP puts into global.asa.
