How would one use them and why? Sub-forums I mean.
I'm used to categories, like in a car forum, you might have a tech area or subject, then a forum under the tech subject might be engines, another transmissions, another brakes.
Then you'd have a buy/sell/trade subject and under that a for sale forum, a wanted forum, etc. under the buy/sell/trade subject.
But I don't see where one would use a sub-forum in that case?
What, just don't use them then?

I'm looking to put together one of the very best forums there is for our group, I want it to be a killer forum, and professional, so I want it WELL structured.

If you just have categories you cannot usually post in them directly. If you have a forum called Mercedes and a Sub-Forum called Drivetrain and Chassis, you can post general stuff in Mercedes but specifics to dt and c in their Subfirums. You don't have to use them and it might not make sense for all applications but it is nice to have the capability.
