As an admin, if I edit someone's post, their signature disappears from the post.
Any guesses as to why that is?

I would imagine it is because YOU have edited their post, and then if you notice, the post will or should then show you own signature, and the fact that it was edited by you, and not by the original poster

It will still show the signature of the person who posted, however, when you edit the post there is a 'show signature' option this option lets you decide if the posters signature is shown or not at the bottom of the post.

I'm not seeing this option when I edit posts. Where should I be looking?

Do you have a signature on your site? if not then it will hide the option, which then may remove the signature.
Its normally located between the box you type in and the Submit button. along with "Enable BBcodes" and "Notify me of replies" (this one depends if you allow emails on your forum)
