As a moderator of a forum one of the problems is that when someone posts a message and a reply is made then the original poster can edit the original post to make the reply look "wrong".  Apart from turning off the edit function how can this be prevented? eg The original post can only be edited if someone hasn't replied to it?

You could have the posts approved by Admin or Moderators..  Or you can turn off the Edit button like you mentioned. I do not think anything is built into something like this

In the Admin section there is an option to make the Edit have a timestamp and say who it has been edited by.
 
It is in Forum Configuration and it's called 'Display edited Author'
