We run our own ad server. Is it possible to incorporate that into the forums instead of using Google AdSense?

It is possible but may require some coding on your part

It would depend on how the ads are served Rick
For example you could include them in your includes/header and footer files, or as Bruce says, you might have to re-write some coding

Actually, that is exactly how I incorporate my ad server into the the "header" and leave the rest for AdSense. You can see an example of this at http://www.Irishdogs.ie/forum" rel="nofollow - www.Irishdogs.ie/forum
